Mushroom kara (spicy) buns [Expt]

Desi style bakery bun


tldr: We were craving desi kara bun, could not find it anywhere, so had to improvise. Recipe inspired from here.


Verdict: Not quite like kara bun but end product tastes amaze! Does not store well so eat off soon!


How to make:

1. 1 tsp yeast + tepid water + pinch of sugar -> wait 5 min

2. 1 cup flour + 1 tbsp oil + salt -> mix

3. Add 1 to 2, add tepid water and make dough -> knead 5-7 min

4. Cover 3 with moist cloth for 1ish hours

5. Make stuffing - used very finely diced onions, garlic, green chili, ginger, mushrooms, turmeric, garam masala, salt

6. Cool stuffing made in step 5 for 30 min

7. After 1 hr, just fold dough made in step 4, break it into 4 balls and keep under moist cloth for 30 min

8. Pre-heat oven to 400F

9. After step 7, put stuffing in dough like stuffed paratha. Close bun

10. Apply egg wash (just one beaten egg) to top of bun, put sesame seeds

11. Bake or 25 min
