Pillow like sesame rolls + tomato garlic chutney [Expt]

Soft rolls + spicy chutney -> great for a cold rainy day and/or with chai


tldr: One of the restaurants we like in San Francisco Bay Area, Ettan, makes these yummy cast iron monkey buns served with homemade butter and eggplant chutney. However, those are available for dine in only. We have been craving these for a long time, so we decided to give it a go with our own twist.


Verdict: Tummy is happy ! Give it a try, makes for a nice afternoon snack as well.


How to make:

(Inspired by a number of bread/roll recipes)


Sesame rolls:

1. In a large bowl, mix about 2 teaspoons of yeast (1 packet or 7g) + 2/3 cup of tepid water + 1 tablespoon sugar

2. Let it sit for about 5 min until yeast bubbles

3. Add 3 tablespoons of vegetable oil and 1 egg (beaten) to the mixture

4. Add salt according to taste ( 0.5 teaspoon should be good)

5. Mix the ingredients

6. Slowly add 2.5 cups of all purpose flour (sub maida) to make a soft dough that does not stick to your hands. You might have to add more water/flour.

7. Knead with hands for about 7-10 min

8. Make these into small balls and place them on a cast iron pan/baking dish lined with parchment paper (lightly oiled)

9. Cover with damp towel and let it rest for about an hour

10. At 30 min, pre-heat your oven to 400

11. Remove the damp towel, brush the top of rolls with milk (for brown coloring) and sprinkle sesame seeds

12. Bake for 12-15 min


Tomato garlic chutney:

1. In a pan heat some oil

2. When the oil is hot add 1 large tomato (roughly chopped) + 4 -5 garlic cloves + thumb sized ginger piece

3. Sautee for 4-5 min

4. Add turmeric, chili powder, a pinch of sugar and salt as per taste

5. Sautee for a couple min

6. Blend in a mixer

7. Tempering: In a pan, add oil. When oil is hot add mustard seeds, white urad dal, curry leaves (kadi patta/karuvepillai) and asafetida

8. Add tempering to chutney


Serve hot!
