Minimalist paneer jalfrezi + finger/spoon licking good!

tldr: When we are tired after a long day at work or a hard workout or just lazy, our gut instinct (pun intended) is to order out. After a point this is not healthy or pocket friendly, so we needed something that was quick, easy and tasty that would break the ordering out habit. While a jalfrezi is pretty common, the experimental part was making a minimalist version that was still super tasty.

Verdict: Super tasty (even without ginger and garlic)! This is a semi dry/semi gravy dish that goes well with all Indian breads or even regular bread for that matter. Will not be our first choice for rice - not enough gravy.

How to make (serves 3):

Pre-prep (~5 min):

  1. Thinly slice half a large onion

  2. Thinly slice half a small green pepper

  3. Cube two small tomatoes

  4. Cut paneer (how much ever you want) into long batons and immerse in hot water

  5. Finely chop cilantro/coriander leaves

  6. Spices: cumin, turmeric powder, red chili powder, garam masala powder, pinch of sugar

Prep (10 - 15 min):

  1. Heat a kadai/pan -> add 1 tbsp oil

  2. When oil is hot -> add cumin and let it splutter

  3. Add onions and sauté for ~3 - 4 min till it becomes translucent

  4. Add turmeric, red chili powder, salt and pinch of sugar -> sauté 30 sec

  5. Add green peppers -> sauté 1 min

  6. Add tomatoes -> sauté until they become mushy (3 - 4 min)

  7. Add paneer -> mix well for about 1 min

  8. Add garam masala powder and mix well

  9. Switch off burner -> add cilantro/coriander

  10. Serve hot
