Upwasish (vegetarian) poke bowl [Expt]

Can range from simple -> complex : rice as base + go crazy on toppings


tl;dr: We decided to go mostly veggie in 2020 but were craving poke. We thought a little about recreating the poke experience in terms of taste and texture and came up with the following (Inspired by multiple recipes).


Verdict: Pretty happy overall ! Could not re-create the tuna/salmon taste but what we made tasted great. Good weeknight dinner option


How to make: We went with 5 toppings 🍉, 🥒, 🌽, 🥑 and 🥭

Play around with quantities according to taste (it's an experiment after all)


Watermelon 🍉:

1. Cut watermelon into cubes

Marinate in this mixture of for couple hours : soy sauce , toasted sesame oil , tahini, honey, vinegar

2. Drain marinade into sauce pan, boil sauce until thickens

3. Sear watermelon in pan for 10 min, let it start caramelizing

4. Mix sauce + watermelon+ spring onion greens + furikakae/ peanuts


Cucumber 🥒:

1. Take whole cucumber (small ones preferably), put it in a bag and smash it using pestle . You want cucumber to release flavors.

2. Mix with roasted sesame oil (few drops)+ gochujang or equivalent spicy sauce


Corn 🌽:

1. Corn kernels + mayo + ketchup + cut jalapeno


Avocado 🥑:

1. Sliced avocado + lemon juice + salt


Mango 🥭:

1. Diced mango


Sushi 🍚:

1. Cook rice ( use any short grain rice )


Assembly:

🍉 + 🌽+ 🥒 + 🥭+ 🥑 + crunchies ( peanuts/furikakae) + green onions + cilantro
